William Oliver’s is expanding to a second location

 

Fort Collins, CO, August 26, 2016:  Just in time for the anniversary of William Oliver's no-tipping policy, the Colorado Pub and Eatery is announcing plans for a second location in Lafayette, CO to be opened by the end of 2016. The 2nd location will feature a roof-top patio and a private room for small meetings. 

"We are very excited about the opportunity to bring our concept to another location," said Ryan Wallace, "we have been searching for the right place for over a year and found it in downtown Lafayette." The new location will be much like the first location in Fort Collins, featuring a bacon-centric food menu and a focus on locally sourced products. 

William Oliver's was the first bar/restaurant in Fort Collins to abandoned the tipping model for employee pay. Opting to pay living wages instead. That move was met with skeptisim by some industry insiders and patrons. "It is very pleasing to know that we can be successful to the point of expanding, while continuing to take care of our coworkers," said Tiffany Wallace. 

The second location will launch with approximately 400 whiskeys and feature 16 beers on tap sourced primarily from breweries within 15 miles of Lafayette. "Our focus has always been on supporting local. The mantra is 'whiskey from all over the world and everything else is Colorado," said Ryan. Beyond whiskey William Oliver's offers a full-bar carrying non-whiskey spirits (like gin, rum, vodka, etc), wine, and beer from Colorado companies exclusively. 

Lafayette was chosen for a number of reasons, including growth potential. Ultimately it was chosen because the town embodies many of the core ideals of William Oliver's. Dedication to locally sourced products, community collaboration, and strong support for small business just to name a few. 

“We knew William Oliver’s would be a great fit for Lafayette as soon as we began working with them,” explains Roger Caruso, Economic Development Specialist for the City of Lafayette. "Their community  spirit, locally sourced fare, and unique restaurant concept definitely provides a desirable enhancement to Old Town's thriving list of destinations."
